Bo and Hubby love this stuff.  Okay, okay I love it too :)   This will be a dessert/snack that is fought over in your house just like in mine!

The photo shows what is left after my son and husband get to it just out of the oven.  This is about 1/2 the full amount.  This snack is great for the park or an on-the-go snack, even in the summer because the ingredients are already melted.  Just don’t forget the wet-wipes.  I’ve seen variations on this recipe that include peanuts, almonds and white chocolate so subsitute, add, remove as you need to.  Here’s how I make it:

Chocolate Chex Mix

Ingredients:
* 4 cups Rice Chex
* 4 cups Corn Chex
* 4 cups Cheerios
* 1 cup raisins
* 1 cup pretzels, small or crush into bite-size pieces
* 1 12oz bag semi-sweet chocolate chips
* 3/4 butter, melted
* 3 tbsp powdered cocoa
* 3 tbsp sugar

Directions:

Preheat oven to 250 degrees F. Spray two glass 13×9 baking dishes with cooking spray. Mix butter, cocoa and sugar in small bowl until well blended. Mix Chex, Cheerios, pretzels, and chocolate chips in a large mixing bowl. Set raisins to the side (don’t cook the raisins in the mix*). Pour cocoa/butter mixture over chex mix and toss/stir to coat. Divide mix evenly between the two baking dishes. Bake at 250 degrees for one hour, stirring every 15 minutes. After an hour remove from oven and allow to cool until chocolate no longer sticks to the bottom of the dish. Pour mix back into a large bowl and stir in raisins. Store in airtight containers.

Warning: This stuff is highly addictive and I cannot be responsible for therapy needed to kick the habit or the weight gained eating it.

Note about the raisins: Yes they would be more yummy coated in the melted chocolate but DO NOT cook them in with the mix. They swell up and taste burnt. Trust me I’ve done it and had to pick them all back out.
