Tonight the ladies from my church are getting together for Fiesta Night! I volunteered to bring the makings for sopapillas! If you’ve never had a bite (that’s all it takes to be hooked for life) of this delicious dessert you are definitely missing out! Our favorite local Mexican restaurant, La Parilla serves them and they rock! So what are they? How do you make them? Here’s all the info and the recipe.

Sopapillas are fried flour tortillas or flat bread flavored with honey. Of course I jazz them up a little ;)   You can increase or decrease any of the ingredients based on your personal preferences (besides the tortilla).

Sopapilla A La Mode

Serves 2-4 People

Ingredients:
* 1 Large Flour Tortilla
* 2 tsp Honey
* 1 tsp Chocolate Syrup
* 1/2 tsp Powdered Sugar
* 2 Scoops Vanilla Ice Cream
* Whipped cream
* 1 Cherry (optional)

Directions:
Preheat grease to med/high heat. Use a deep fryer or a pan with 1/4″ of veggie oil. Cut tortillas into strips or fun shapes. Be creative, but pieces fry best when no larger than 2″ but no smaller than 1″. Once grease is hot fry tortilla pieces until golden brown. Do NOT over cook. Remove from grease and drain on paper towels. Place two scoops of ice cream in center of the plate. Arrange tortillas artfully on a plate around ice cream. Drizzle honey and chocolate syrup over tortillas and ice cream. Add a few dollops of whipped cream around the base of the ice cream and put the cherry on top. Sprinkle with powdered sugar. Serve with spoons and enjoy :)
